Residential Care Kitchen Duties Additional Duties Key Skills and Specifications

The following lists the key areas for which you are responsible and accountable. They are not totally exhaustive and your support is required in developing your Job Description.

Compliance

· To comply with the Health and Social Care (Safety and Quality) Act 2015 and Health and Safety at Work etc. Act 1974 and Environmental Health and Food Safety legislation.

· All employees of the Crown Care Group are required to respect the confidentiality of all matters relating to the business of the residential care unit and in relation to the service users and their family and friends. Employees must therefore respect the requirements of the Data Protection Act 1998.

· Employees must ensure they are fully aware of their responsibilities under the Health and Safety at Work etc. Act 1974 and ensure that safe working practices are followed at all times.

· To fully comply with all Crown Care policies and procedures.

Residential Care

· Ensure all residents are dealt with courteously and expeditiously at all times.

· To maintain up-to-date, accurate records of all residents’ individual special dietary needs and to prepare a range of menus that will reflect the said needs.

Kitchen Duties

· The purchasing of fresh food on a daily basis from local suppliers.

· The ordering of frozen food from the Crown are Group’s preferred suppliers, checking on a regular basis that supplier’s prices are competitive.

· To ensure that foods are labelled correctly for storage upon receipt e.g. meats, frozen food etc.

· Preparation of menus for the residents, as agreed by the Care Home Manager, ensuring that nutritional foods are prepared to a high standard taking into account any dietary requirements.

· To ensure that the Kitchen Assistant clears dishes efficiently and in a tidy manner.

· To be responsible for maintaining a high standard of hygiene at all times within the Kitchen.

· To ensure that all procedures are carried out in line with the Food Hygiene and Health and Safety at Work Regulations.

· To ensure that all details are recorded in the event of an outbreak of food poisoning and to notify the Care Home Manager straight urgently.

· To ensure that the temperature of refrigerators and freezers are recorded three times daily.

· To ensure all meals are probed for temperature recording in accordance with EHO regulations.

· To complete all documentation required to be maintained in a care home catering establishment, to meet with EHO regulations.

· To ensure that protective clothing is worn at all times.

· To ensure that stock on receipt is rotated in order to ensure freshness of foods.

· To ensure that food samples are obtained of all ‘risk’ foods daily.

· To ensure that neither jewellery nor nail varnish is worn when on duty in the Kitchen.

Additional Responsibilities

· To assume responsibility for undertaking any work related training.

· To attend staff meetings when required.

· To undertake any other duties as necessary.

· To comply with the Crown Care Group’s guidelines and policies at all times and follow all training as provided.

Key Skills and Specifications

· To hold a minimum Level 3 NVQ in Catering and 701 / 702 catering qualification.

· To have a proven track record in catering / cooking, ideally in a health care establishment.

· To have the ability to work independently and within a team.

· To demonstrate good organisational and preparation skills.

· To have the ability to use initiative.

· To possess good communication skills.

· To demonstrate a solid understanding and ability to adhere to Health and Safety at Work Regulations and Food and Hygiene Regulations.

· To possess a sound knowledge of operating industrial sized kitchen machinery.

· To demonstrate a polite and friendly manner.
