Hello my name is Karen, I am the Admin Manager here at Crandon Springs. I feel very privileged to be a part of the team and make a difference in our resident’s life. No day is the same here, which I absolutely love!

Simon Jackson
Simon JacksonJob Title:Head ChefJoined: 2025

With over 40 years of culinary experience, I bring a wealth of knowledge, expertise and creativity to my role of Head Chef, alongside my commitment to resident wellbeing.

My culinary journey began in the armed forces, where I catered for specialist teams, including bomb disposal and diving units. This early experience instilled in me the value of good nourishment to maintain physical health and emotional well-being, and the importance of precision and teamwork, all qualities I have carried throughout my career. I later honed my skills in some of Wells' most respected restaurants and also worked in care home catering, providing me with insight into the nutritional needs of older adults.

I enjoy designing delicious, home-cooked meals tailored to residents' preferences and dietary requirements, and I am passionate about making a meaningful difference through food. It's incredibly rewarding to see the pleasure a well-prepared meal can bring to someone's day, alongside vital nutritional benefits.
